  • Overripe Bananas– Overripe bananas add the perfect amount of moisture and sweetness that is needed for the most delicious outcome
  • Vanilla– Vanilla extract or Caribbean style vanilla flavoring can be used
  • Sour Cream– It may seem crazy but sour cream adds amazing creaminess and texture
  • Chocolate Chips– dark chocolate or milk chocolate will work well.
  • Rum– Myers Rum is a dark rum from Jamaica that pairs well with the chocolate and banana flavors in this recipe.
  • Shredded Coconut– (optional) If you want to elevate this recipe I highly recommend adding shredded coconut. It adds the Caribbean flavor and amazing texture!

How to make this Caribbean Chocolate Banana Bread

Making this Caribbean style banana bread is very simple and best of all only requires one bowl which means less mess when your done!

1. Cream butter, sugar, and oil for about 3 minutes

2. To mixture add eggs, rum, vanilla, and bananas

3. Add Flour, baking soda, and salt. Stir until combined

4. Stir in chocolate chips and walnuts

5. Optional but highly recommend adding 1/4 cup of shredded coconut

6. Sprinkle chocolate chips and a tablespoon on sugar on top. Bake at 350 degrees for about an hour or until toothpick is clean

• This Caribbean Banana bread taste best served warm

• To freeze: Once cooled, wrap in plastic wrap and place in an airtight container. This ensures that the moisture of this delicious nut bread will be kept. Then, place in freezer for up to two months.

Ingredients
  

  • 4 tbsp Butter
  • 1/4 cup Oil
  • 1 cup Sugar
  • 2 Eggs
  • 1 tsp Vanilla
  • 3 Ripe Bananas mashed
  • 1/4 cup Sour Cream
  • 1 3/4 cup Flour
  • 1 tsp Baking soda
  • 1/2 tsp Salt
  • 1/2 cup Chocolate Chips additional tbsp to sprinkle on top of loaf
  • 1/4 cup Chopped Walnuts
  • 1/4 cup Myers Caribbean Rum
  • 1 tbsp sugar
  • 1/4 cup shredded coconut optional

Instructions
 

  • Preheat Oven to 350 degrees
  • In a large bowl cream butter, oil, and sugar
  • Add mashed bananas, eggs, rum, vanilla, and sour cream. Stir until well combined.
  • Add flour, baking soda, and salt.
  • Stir in chocolate chips, walnuts, and shredded coconut (optional)
  • Pour mixture into greased loaf pan
  • Sprinkle one tablespoon of sugar and one tablespoon of chocolate chips on top of bread
  • Bake for 50-60 minutes or until toothpick comes out clean.
  • Let sit for 15 minutes before serving

Notes

This can be made ahead of time and freezes well. Once cooled wrap tightly in plastic wrap, place in ziplock bag. Can be frozen for up to 2 months.
